Santa Fe Stuffed Peppers
(Makes 8 stuffed peppers)
Ingredients:
| 4 | Bell peppers, halved and seeds removed |
| 2 Cups | EE Santa Fe Black Beans & Rice, prepared |
| 1/2 Cup | Shredded cheese, extra for topping |
| 1/2 Tsp | Cumin |
| Optional: | 1/2 cup EE Freeze-Dried Beef Crumbles (added to filling for extra protein) |
Instructions:

Preheat oven: Set oven to 375°F.

Mix filling: In a bowl, combine prepared Santa Fe Black Beans & Rice, shredded cheese, cumin, and optional beef crumbles if using.

Stuff peppers: Spoon the mixture into the halved bell peppers and place them in a baking dish.

Bake covered: Cover with foil and bake for 25 minutes.

Add topping: Remove foil, sprinkle extra cheese on top.

Bake uncovered: Return to oven and bake for 5 more minutes until cheese is melted.

Serve: Enjoy warm with sour cream or salsa.
