Santa Fe Stuffed Peppers

(Makes 8 stuffed peppers)




Ingredients:

4 Bell peppers, halved and seeds removed
2 Cups EE Santa Fe Black Beans & Rice, prepared
1/2 Cup Shredded cheese, extra for topping
1/2 Tsp Cumin
Optional: 1/2 cup EE Freeze-Dried Beef Crumbles (added to filling for extra protein)

 

Instructions:

  1. Preheat oven: Set oven to 375°F.
  2. Mix filling: In a bowl, combine prepared Santa Fe Black Beans & Rice, shredded cheese, cumin, and optional beef crumbles if using.
  3. Stuff peppers: Spoon the mixture into the halved bell peppers and place them in a baking dish.
  4. Bake covered: Cover with foil and bake for 25 minutes.
  5. Add topping: Remove foil, sprinkle extra cheese on top.
  6. Bake uncovered: Return to oven and bake for 5 more minutes until cheese is melted.
  7. Serve: Enjoy warm with sour cream or salsa.
