Cooking 14 year old pinto beans tips

First bought supplies from Emergency Essentials in 2009 and decided to open a can of pinto beans to see how they cooked up after so long. First attempt, soaked abt 1 lb in pan over night and started cooking next day. Cooked for abt 15 hours adding water as needed. After doing some research I was prepared for the long cooking time. The beans get real dry even in the cans. Final result was water was very black and beans had an unfavorable off-taste; tossed. Second attempt, soaked some in a quart jar in fridge for several days and changed water each day as beans soaked up the water. Put beans in pot with plenty of water and started cooking (use a lid to reduce evaporation), totally changing water every 3-4 hours. Changing the water regularly helped get rid of the off-taste. Always soak & pour out the soaking water...many health benefits. After, again almost 15 hours cooking, as beans were getting chewable added salt, other spices, onion, tomatoes, etc, some sausage and let it finish cooking. They were very tasty with no off-taste and you really wouldn't have known they were 14 years old. I think the long cook time, etc would apply for all dried beans when kept for this long & longer so just be prepared. We have been very satisfied with our on-going purchases from Emergency Essentials over the years.
