Easy Marinara

(Yields 2-2 1/2 Cups)




Ingredients:

2 Cups EE Freeze-Dried Tomato Chunks
1 1/2 Cups Vegetable broth
1 Medium yellow onion, finely chopped
4 Cloves Garlic, minced
3 Tbsp Olive oil
1 Tbsp Dried oregano
To taste Salt and pepper

 

Instructions:

  1. Simmer: In a 1-quart saucepan, add tomatoes and 1 cup of broth. Simmer to soften and reduce.
  2. Sauté: In a medium skillet, sauté the onion until translucent, then add garlic and cook until fragrant.
  3. Combine: Add the prepared tomato chunks to the skillet and season with oregano, salt, and pepper.
  4. Simmer Again: Stir in an additional 1/2 cup of vegetable broth and simmer for 5 more minutes.
  5. Serve: Spoon over pasta and enjoy!
