Easy Marinara
(Yields 2-2 1/2 Cups)
Ingredients:
| 2 Cups | EE Freeze-Dried Tomato Chunks |
| 1 1/2 Cups | Vegetable broth |
| 1 | Medium yellow onion, finely chopped |
| 4 Cloves | Garlic, minced |
| 3 Tbsp | Olive oil |
| 1 Tbsp | Dried oregano |
| To taste | Salt and pepper |
Instructions:

Simmer: In a 1-quart saucepan, add tomatoes and 1 cup of broth. Simmer to soften and reduce.

Sauté: In a medium skillet, sauté the onion until translucent, then add garlic and cook until fragrant.

Combine: Add the prepared tomato chunks to the skillet and season with oregano, salt, and pepper.

Simmer Again: Stir in an additional 1/2 cup of vegetable broth and simmer for 5 more minutes.

Serve: Spoon over pasta and enjoy!
