Spinach Pie

Flaky Greek Spinach Pie

(Makes 4-6 servings)




Ingredients:

2 Cups EE Freeze-Dried Chopped Spinach
1 1/2 Cups Water
1/4 Cup EE Dehydrated Chopped Onions
1/4 Tsp EE Iodized Salt
1 Cup Feta cheese (crumbled)
8 oz Phyllo dough
1 Tbsp Olive oil

 

Instructions:

  1. Reconstitute: Simmer spinach and onions in water until water is gone (5-7 minutes).
  2. Preheat: Oven to 375°F.
  3. Combine: Mix prepared spinach and onions with feta cheese, season to taste with salt and pepper.
  4. Prepare: In a greased baking dish, lay two thirds of the phyllo pastry, brushing each sheet of phyllo dough with olive oil.
  5. Fill: Place filling into dish, folding phyllo sheet edges. Cover the pie with the remaining phyllo.
  6. Bake: Score the top layer with a sharp knife and bake for 60 minutes or until top is golden brown.
  7. Cool: Place on cooling rack for 30 minutes before cutting.
