Bean Burritos

(Makes 4 Burritos)




Ingredients:

1 1/2 Cups EE Dehydrated Refried Pinto Beans
1/4 Tsp EE Iodized Salt
1/4 Tsp Onion powder
1/4 Tsp Garlic powder
1 Cup EE Freeze-Dried Tomato Chunks
1/4 Cup EE Freeze-Dried Diced Green Bell Peppers
2 Tbsp EE Dehydrated Chopped Onions
1 1/2 Cups Water
4 Burrito tortillas
To taste Cilantro, Lime, Cheese, and Salt (optional)

 

Instructions:

  1. Preheat: Set oven to 375°F.
  2. Simmer beans: Combine beans, salt, onion powder, garlic powder, and 1 cup water in a pan for 5-7 minutes until beans thicken.
  3. Simmer salsa: Add tomatoes, bell peppers, onions, salt, and 1/2 cup water in a separate pan for 1-2 minutes. Add cilantro, lime, and salt to taste if desired.
  4. Assemble: Spread 1/2 cup of the bean mixture onto the center of the tortilla. Then spread 1/4 cup of the salsa on top of the beans. Sprinkle with shredded cheese if desired before rolling the burrito.
  5. Bake: Transfer burritos to a greased baking sheet and bake for 12 minutes.
  6. Serve: Top with guacamole, sour cream, and your favorite hot sauce.
