Bean Burritos
(Makes 4 Burritos)
Ingredients:
| 1 1/2 Cups | EE Dehydrated Refried Pinto Beans |
| 1/4 Tsp | EE Iodized Salt |
| 1/4 Tsp | Onion powder |
| 1/4 Tsp | Garlic powder |
| 1 Cup | EE Freeze-Dried Tomato Chunks |
| 1/4 Cup | EE Freeze-Dried Diced Green Bell Peppers |
| 2 Tbsp | EE Dehydrated Chopped Onions |
| 1 1/2 Cups | Water |
| 4 | Burrito tortillas |
| To taste | Cilantro, Lime, Cheese, and Salt (optional) |
Instructions:

Preheat: Set oven to 375°F.

Simmer beans: Combine beans, salt, onion powder, garlic powder, and 1 cup water in a pan for 5-7 minutes until beans thicken.

Simmer salsa: Add tomatoes, bell peppers, onions, salt, and 1/2 cup water in a separate pan for 1-2 minutes. Add cilantro, lime, and salt to taste if desired.

Assemble: Spread 1/2 cup of the bean mixture onto the center of the tortilla. Then spread 1/4 cup of the salsa on top of the beans. Sprinkle with shredded cheese if desired before rolling the burrito.

Bake: Transfer burritos to a greased baking sheet and bake for 12 minutes.

Serve: Top with guacamole, sour cream, and your favorite hot sauce.
