Crispy Corn Fritters

(Yields 4-5 Fritters)




Ingredients:

1 Cup EE Freeze-Dried Whole Kernel Sweet Corn
6 Tbsp EE All-Purpose Flour
4 Tbsp EE Whole Egg Powder
1/2 Tsp EE Iodized Salt
1/4 Tsp Black pepper
1/4 Tsp Onion powder
1/4 Tsp Garlic powder
1 Cup + 6 Tbsp Water
As needed Oil for frying

 

Instructions:

  1. Rehydrate: Let corn sit in 1 cup hot water for 5-10 minutes. Drain excess water.
  2. Make the batter: Whisk together all dry ingredients, add 6 Tbsp water, and then fold in the corn.
  3. Form fritters: Use a 1/4 cup measuring cup to measure out portions.
  4. Fry: In a pan with oil, fry fritters on each side for 2-3 minutes (until golden brown), then serve.
