Crispy Corn Fritters
(Yields 4-5 Fritters)
Ingredients:
| 1 Cup | EE Freeze-Dried Whole Kernel Sweet Corn |
| 6 Tbsp | EE All-Purpose Flour |
| 4 Tbsp | EE Whole Egg Powder |
| 1/2 Tsp | EE Iodized Salt |
| 1/4 Tsp | Black pepper |
| 1/4 Tsp | Onion powder |
| 1/4 Tsp | Garlic powder |
| 1 Cup + 6 Tbsp | Water |
| As needed | Oil for frying |
Instructions:

Rehydrate: Let corn sit in 1 cup hot water for 5-10 minutes. Drain excess water.

Make the batter: Whisk together all dry ingredients, add 6 Tbsp water, and then fold in the corn.

Form fritters: Use a 1/4 cup measuring cup to measure out portions.

Fry: In a pan with oil, fry fritters on each side for 2-3 minutes (until golden brown), then serve.
