Flaky Greek Spinach Pie
(Makes 4-6 servings)
Ingredients:
| 2 Cups | EE Freeze-Dried Chopped Spinach |
| 1 1/2 Cups | Water |
| 1/4 Cup | EE Dehydrated Chopped Onions |
| 1/4 Tsp | EE Iodized Salt |
| 1 Cup | Feta cheese (crumbled) |
| 8 oz | Phyllo dough |
| 1 Tbsp | Olive oil |
Instructions:

Reconstitute: Simmer spinach and onions in water until water is gone (5-7 minutes).

Preheat: Oven to 375°F.

Combine: Mix prepared spinach and onions with feta cheese, season to taste with salt and pepper.

Prepare: In a greased baking dish, lay two thirds of the phyllo pastry, brushing each sheet of phyllo dough with olive oil.

Fill: Place filling into dish, folding phyllo sheet edges. Cover the pie with the remaining phyllo.

Bake: Score the top layer with a sharp knife and bake for 60 minutes or until top is golden brown.

Cool: Place on cooling rack for 30 minutes before cutting.
