Hearty Vegetable Hash Skillet
(Serves 2-3)
Ingredients:
| 1 Cup | EE Dehydrated Mixed Vegetables |
| 1/3 Cup | EE Scrambled Egg Mix (prepared) |
| 4 oz | Sausage, crumbled or diced |
| 1 Tbsp | Olive oil or butter |
| Optional | 1 clove garlic, minced |
| To taste | Salt, pepper, and your favorite seasoning (Cajun, Italian, or taco seasoning work well) |
Instructions:

Cook sausage & veggies: In a saucepan, combine vegetables and sausage with 1 cup water. Bring to a boil, then reduce heat and simmer 10–15 minutes until veggies are soft and sausage is cooked through. Drain excess water.

Sauté garlic: In a skillet over medium-high heat, warm oil (or butter) and garlic until fragrant.

Scramble eggs: Scramble prepared egg mix as usual then add garlic, vegetables, and sausage.

Serve and enjoy: Season to taste with salt and pepper and enjoy!
