"Fresh mushrooms from the store go bad fast. Stocking freeze dried mushrooms is great when you use more mushrooms than you make trips to the store, and I fall into that category. I buy the blue cartons from the store and wash, slice and freeze dry them myself, then vacuum seal them in mason jars with O2 absorbers and desiccant. It is wonderful to have Emergency Essentials Mushrooms available on the same shelf because I run out of time to do all that. The difference between what I make and what they make is very minor. The number 10 can has some mushroom dust in the bottom, but otherwise they taste the same. I make mushroom base out of that dust and use it to season meat that I make in 15 pound increments."
