Blueberry Energy Bites

(Makes about 18 bites)




Ingredients:

1 1/2 Cups Nour dates, pitted
1 Cup Cashews, almonds, or walnuts
2 1/2 Tbsp Almond butter
1 Tsp Vanilla extract
1/4 Tsp Sea salt
1/3 Cup EE Freeze-Dried Whole Blueberries

 

Instructions:

  1. Combine base: Add dates, nuts, almond butter, vanilla extract, and sea salt to a food processor.
  2. Pulse & blend: Pulse a few times to break up ingredients, then blend for about 1 minute until mixture holds together when pinched.
  3. Add berries: Add freeze-dried blueberries and pulse until they’re broken into small bits and evenly mixed.
  4. Scoop: Use a tablespoon or spoon to scoop out the mixture.
  5. Roll: Pack each scoop tightly and roll into balls using your hands.
  6. Repeat: Continue until all mixture is used—makes about 18 energy bites.
  7. Enjoy: Eat immediately or store in an airtight container.
