Blueberry Energy Bites
(Makes about 18 bites)
Ingredients:
| 1 1/2 Cups | Nour dates, pitted |
| 1 Cup | Cashews, almonds, or walnuts |
| 2 1/2 Tbsp | Almond butter |
| 1 Tsp | Vanilla extract |
| 1/4 Tsp | Sea salt |
| 1/3 Cup | EE Freeze-Dried Whole Blueberries |
Instructions:

Combine base: Add dates, nuts, almond butter, vanilla extract, and sea salt to a food processor.

Pulse & blend: Pulse a few times to break up ingredients, then blend for about 1 minute until mixture holds together when pinched.

Add berries: Add freeze-dried blueberries and pulse until they’re broken into small bits and evenly mixed.

Scoop: Use a tablespoon or spoon to scoop out the mixture.

Roll: Pack each scoop tightly and roll into balls using your hands.

Repeat: Continue until all mixture is used—makes about 18 energy bites.
