Crispy Lentil Fritters
(Makes 8-10 fritters)
Ingredients:
| 3 Cups | Water |
| 1 Cup | EE Lentils |
| 1 Cup | EE Freeze-Dried Broccoli |
| 1/4 Cup | EE All-Purpose Flour |
| 2 Tbsp | EE Dehydrated Chopped Onions |
| 3/4 Tsp | EE Iodized Salt |
| 1/4 Tsp | Turmeric |
| 1/4 Tsp | Garlic powder |
| 1/4 Tsp | Onion powder |
Instructions:

Simmer: Bring lentils, 1/2 tsp salt, turmeric, and 2 cups water to a simmer. Cover for 15-20 minutes until lentils are soft. Drain any excess water.

Prepare: Combine broccoli, onions, powders, 1/4 tsp salt, and 1 cup water. Simmer until most of the water is gone.

Mix: Combine prepared lentils and other ingredients in a food processor with flour; mix together.

Fry: Add oil to a pan until hot. Take golf ball-sized (1/4 cup) portions of mix and smash into patties. Fry each side 3-5 minutes until golden brown.
