Granola Trail Mix

Granola Trail-Mix

(Yields about 12-14 cups)




Ingredients:

4 Cups EE 9-Grain Cereal
2 Cups Sweetened Shredded coconut
2 Cups Sliced almonds
3/4 Cup Vegetable Oil
1/2 Cup EE Honey Powder (prepared)
1 1/2 Cup Dried diced apricots
1 Cup Diced dried figs
1 Cup Dried cherries
1 Cup Dried cranberries
1 Cup Roasted, unsalted cashews

 

Instructions:

  1. Preheat: oven to 350°F.
  2. Mix dry base: In a large bowl, toss oats, coconut, and almonds.
  3. Combine wet ingredients: In a small bowl, whisk together oil and honey.
  4. Coat & bake: Pour wet mixture over oat blend and stir until evenly coated. Spread on a baking sheet and bake for 45 minutes, stirring occasionally, until golden brown.
  5. Cool: Remove from oven and let cool, stirring occasionally to prevent clumping.
  6. Add fruit & nuts: Mix in apricots, figs, cherries, cranberries, and cashews. Store in an airtight container.
